Berry Pancake Scones

  • 1 pancake shake mix
  • 1 1/2 cups or milk
  • 1/2 cup of frozen blueberries or a berry of your choice
  • Optional; 1/2 of chocolate chips
  1. Preheat oven at 180℃
  2. Empty the pancake mix into a bowl
  3. Add milk and stir with a spoon
  4. Stir in berries and any other desired extras
  5. Line a baking tray with baking paper or foil
  6. Roll scone mix into balls and bake for 20mins

Best served with butter or with thickened cream

Easy Noodle Stir-fry

  • 1/2 brown onion
  • 2 small carrots
  • 1 zucchini
  • 2 packets of noodles
  1. Boil 3 cups of water
  2. Empty chicken or beef seasoning in the water and boil the noodles for 2mins
  3. Cut the onion, carrot and zucchini in long thin strips and set aside
  4. In a pan add some oil, once the oil has heated add in onions and carrots and cook for 3 mins
  5. Add the zucchini to the pan, if desired add two teaspoons of soy sauce
  6. Drain the noodles from the saucepan and add to the pan of vegetables. Serve and enjoy as a lunch or a lite dinner. If you have any leftover meat feel free to add it to your meal.

Pork Bolognese on Penne

  • 250g penne pasta
  • Pasta sauce
  • 250g pork sausages
  • 1 onion
  • 2 zucchini
  • 2 carrots
  1. Boil a saucepan of water, once boiled added a pinch of salt, 250g of pasta and boil for 12mins – set pasta aside
  2. Dice onion, carrots and zucchini with a grater
  3. In a frypan add some oil, once oil has heated up add sausages and cook all the way through
  4. Remove sausages from pan and cut into small coins
  5. Add sauce, grated vegetables and sausage pieces into the pan that you just cooked the sausages in. Once the sauce has heated up, pour over cooked pasta and enjoy.

Sausage Pasta with Zucchini and Corn

  • 250g penne pasta
  • 250g pork sausages
  • 1 drained can of corn
  • Ingredients to make white sauce; 2 tablespoons of plain flour, 1 cup of milk and 20 grams of butter
  1. Boil a saucepan of water, once boiled added a pinch of salt, 250g of pasta and boil for 12mins – set pasta aside
  2. In a frypan add some oil, once oil has heated up add sausages and cook all the way through
  3. Remove sausages from pan and cut into small coins
  4. In the empty frypan that you just cooked the sausages. Add milk while continually stirring then add the flour and butter. Once white sauce becomes thicker add corn and cut sausage pieces.
  5. Stir in pasta, enjoy this delightful and saucy dish.
